Opening Say Cheese...cake! in 2020 and then Verseau Bistro on January 6, 2023 was the culmination of a lifelong dream of mine, after leaving 40 years of employment in Corporate America behind in 2019.

It's been nothing short of a labor of love. A lot of blood, sweat and tears went into this, especially opening Verseau. I couldn't have even explored this opportunity to make it as successful as we've been without the passion and talent of my wonderful GM, Katelin Myers.

I have many repeat customers, even today, who have purchased my cheesecakes since I started in May of 2020. The amazing and continuous positive feedback received from you, my customer base, over all of this time definitely underscores that I created a product that I'm extremely proud of.

My wholesale customers, some who have been with me since the very beginning in 2020 ( O'Toole's Restaurant Midlothian and O'Toole's Forest Hill) helped propel my cheesecake success. I've had the honor to bake for many local restaurants (several I supplied for years), like Latitude Seafood; Tazza Kitchen; Eggspectation; The Virginia Museum of History and Culture; 21 Spoons and also Oceano.

However, I have decided the time is now to bow out, while still at the top of my game.

Say Cheese...cake! and Verseau Bistro will be permanently closing - the last day of business will be Saturday, February 15th.

I want to thank each and every one of you for your support over these years. Some of you have become like family to me and Katelin and the enthusiasm you showed to each of us means more than mere words can say.
